Question

After chewing on a piece of toast for five minutes, a student noticed a sweet taste in her mouth. Explain her observations. Why is D-glucose (dextrose), rather than sucrose, given intravenously to patients? Glucose in the urine may be a symptom of what disease? Explain why infant formulas often contain mixtures of dextrins and maltose rather than starch. What polysaccharide consists of alpha-D-glucose units? What polysaccharide consists of beta-D-glocosc units? List two advantages in using the Clinitest reagent in preference to Benedict's reagent. Why is it necessary that you digest (hydrolyze) starchy food? D-Xylose, on completion of mutarotation, has specific rotation +18.6 degree. When its aldehyde group is reduced to a -CH_2 OH group, what will the specific rotation of the product be?

Explanation / Answer

1.

Toast is a type of starch that is made up of glucose molecules and glucose is, again, a form of sugar.

If you chew on a piece of bread for a while, it will begin to taste sweet because the enzymes in saliva are already beginning to break down the starch into glucose.

2.

Sucrose is considered a complex sugar and is made up of glucose and fructose. Our bodies need to break this down before it can utilize it as energy.

Glucose is the simplest form of sugar and can be utilized by the body as soon as it enters the blood stream. It doesn't have to go through any metabolic process.

Hence D-glucose (dextrose) are given intravenously to paient.

3.

Glucose in urine may be a symptom of Diabetes.

4.

The digestive systems of babies are not fully developed. So starches are not easily digested, which can cause gas and discomfort when consumed. Even though dextrose (dextrins) and maltose and are calorically less efficient than starch, but they are also much easier to digest.
