The carbohydrate discussed above is sucrose and a common table sugar that is having a molecular weight of 342.3 g/mol. The complete hydrolysis of the sucrose gives glucose and fructose in 1:1 ratio. when hydrolysed by both enzymes alpha-glucosidase and beta-glucosidase both gives an equimolar mixture of glucose and fructose. The fehlings test gives negative for the sucrose and when treated with methyl iodide the sucrose gives 1,3,4,6-tetra-O-methyl-D-fructose as one of the product. The mass spectrometric analysis which is generally performed for determining the molecular weight gives 342.3 g/mol. The structure of sucrose is given everywhere. Please check.
