THE REASON BEHIND THIS IS VERY SIMPLE.

As you are adding sodium thiocyanate solution into the ferric nitrate solution then then the Nitrate ion (NO3-) is replaced by thiocyanate ion (SCN-) grdually/slowly, solution colr getting darker. Once it reaced its final equilibrium means all Nitrate ion (NO3-) is get replaced by thiocyanate ion (SCN-), then it showed dark color. All of this dark color is due to the charge transfer transition in Fe-SCN complexes whether in Fe-nitrate complex it was absent.
