Question
4. Baking soda, sodium bicarbonate, NaHCOat is used to produce a "rising action" in the dough for baked goods. When mixed with an acidic material, such as lemon juice, a gas is given off that is trapped in the dough and results in the rising action." Write an equation that shows what happens to this salt when it is stirred with the lemon juice in the mixing bowl. What brings about the "rising action" in the dough? 5. A company was accused of dumping phosphate rich waste into a local pond. How could the authorities determine the presence of phosphate in the water?Explanation / Answer
4) So the baking soda or NaHCO3 reacts with citric acid in the lemon juice to give carbondioxide gas
and the reaction look like,
NaHCO3 + C6H5O7H3 ---------> Na3C6H5O7 + 3H2O+ 3CO2
Before mixing the ough you add water and baking soda, so these two will react to give CO2 gas.
After the dough is kneaded and left alone the CO2 which was formed and trapped will try to escape
from the solid dough and this is called "rising action" in the dough.
5) We can employ colorimetric or spectrometric methods to determine the presence of phosphate.
Standard colorimetric methods like Stannous chloride method, yellow method can be adopted
as procedures to detect the phosphate in the water.
