In the cooking process the protein got heat. By this heat they have been denatured. They contain polypeptide chains. But in denaturation protein break up its quaternary and tertiary structure and bunch together and form the insoluble egg protein.

In the protein digestion all peptides bonds of protein are hydrolyzed and there are no long protein molecules only amino acids are remain. In general digestion of protein means its stand beak up into its amino acid.
