My Meal Evaluation For this extra credit assignment worth 26 points:

Select a meal that you frequently consume and examine its nutritional value. The meal should include some combination of components such as protein, carb, grain, vegetable, dairy, beverage, etc.. An example is fish and chips, cole slaw, glass of beer, and apple pie a la mode. Estimate the amounts/serving size/grams/mg for the nutrients below as best as possible and include them in a table form. Make use of web based or other nutrient calculators. At minimum address the following:

1. Why this meal appeals to me (e.g., cultural, traditional, nutritional content, convenience, pure enjoyment)

2. Approximate frequency of this meal

3. Where I get this meal, do I prepare it myself?

4. Estimate ratio of marconutrients kcalories (i.e., %carb:%fat:%protein)

5. Estimate of the distribution of the classes of carbohydrates (sugars, polysaccharides, fibers) and lipids (triglycerides, phospholipids, sterols)

6. Quality of the protein (essential amino acids present?)

7. Significant source (>20% of RDA) for Vitamin D, Vitamin E, Calcium, magnesium?

8. Other notable significant nutrients present? If you find it difficult to address the above items, chose another meal to evaluate. The meal should not come from a single can or frozen box.

Liver and onion is a traditional way of preparing liver, and is often a good way to introduce liver to people who are squeamish. To tenderize liver and tone down the strong flavor and aroma, cut liver into narrow strips, then soak the strips in milk for up to four hours. Saute sliced onions in a heavy skillet with a small amount of cooking oil. For a healthy dish, use hearty-healthy canola oil or olive oil. Remove the cooked onions with a fork, then place the liver in the skillet. Saute the liver until the outside is brown and the inside is slightly pink. then serve the liver with the onions piled on top. Liver and onions are often served with bacon. If fat is a concern, omit the bacon, or use leaner turkey bacon. If you like, you can dredge the liver in a mixture of flour, salt and pepper before frying.

thank you
