Steam distillation is based on the principle that two immiscible liquids always boil at a lower temperature than the boiling point of the either pure components ,This is because the total vapour pressure of the mixture is sum of vapour pressures of the individual components . Hence during the isolation of eugenol by steam distillation water is one of the other components and eugenol being immiscible with water is isolated . Thus the product obtained by steam distillation is always obtained at a temperature which is always less than hundred degrees thereby avoiding decomposition of the product.
