1) The first thing , that the heating is not done for any fixed amount of time such as 2 minutes , but it should be perfomed till the time all of the water molecules have been lost from the compound , and the mass of the compound becomes constant.

2) Secondly after heating , the compound was left in open air for 20 minutes. The open air contains moisture too. So the compound will again absorb all the moisture and hence will lead to incorrect calculations.
