Explanation:-Glucose is better than maltose as a respiratory substrate of yeast for their cellular respiration because glucose as a monosaccharide (C6H12O6) can easily be broken down by yeast; however, maltose is a disaccharide (consists of two units of glucose; C12H22O11). So if both glucose and maltose are available for cellular respiration for yeast, first of all, glucose will be utilized and then maltose.

            Disaccharide (2 X Monosaccharide)

So, 4 molecules of CO2 will be produced after breakdown of a disaccharide however, 2 molecules of CO2 will be generated by monosaccharide breakdown.
