1. the rate of enzyme activity is the fastest at the start of an enzyme-catalyzed reaction Because there are higher substrates for the enzyme to function on in the starting.the reactions are random chance reactions which rely on the physical interaction between the enzyme and the substrate, this occurs at a higher rate at the beginning of the reaction.
2. The enzyme work as long as the substrate is available. If the concentration of substrate and enzyme are constant, the enzyme activity will also be constant. Enzymes are influenced by environmental conditions like pH, temperature and ionic concentration etc. therefore environmental conditions must also be constant. the enzyme should also be a perfect enzyme meaning that it cannot be saturated by the substrate.
