Question
The restaurant you work for has the following four process areas and capacities.
Process Area Capacity
Host: seat guests 165 guests/hour
Wait Staff: take orders and deliver food 195 guests/hour
Kitchen: prepare meals 90 guests/hour
Clean up: clear tables 170 guests/hour
What is the maximum number of guests this restaurant could feed in 4 hours?
If additional wait staff are added to increase their capacity to 200 guests/hour, how many guests this restaurant could feed in 4 hours?
If additional kitchen staff are added to increase their capacity to 150 guests/hour, how many guests this restaurant could feed in 4 hours?
Explanation / Answer
1. Maximum number of guests the restaurant could feed in 4 hours= 90 guests/hr *4 hours=360 guests
Here the limiting criteria is 90 guests per hour, eventhough the other process areas have more capacity the hotel could prepare meals for 90 guests per hour.
2. Here the wait staff added to increase their capacity to 200 guests per hour which has no influence number of guests to be fed(As it is not the limiting criteria).
So number of guests could be fed by the restaurant in 4 hours = 4*90= 360 guests
3. Here the kitchen staff (Limiting Criteria) increased to 150 guests per hour.
Hence number of guests could be fed by the restaurant in 4 hours = 4*150= 600 guests
