In a human body, once the food is ingested, it reaches the stomach and then further into the small intestine where the food is further digested and absorbed into the bloodstream. Simple sugars present in the meal are directly absorbed and complex sugars are broken down into monosaccharides and disaccharides before absorbing them. When these sugar molecules circulate bloodstream insulin-a peptide hormone acts as a gateway pass into the cells, Insulin is released by the pancreas during a blood sugar spike and attaches itself onto the surface receptors of cells allowing the sugar molecules to enter the cells for storage or energy release purposes. Glycemic index- It is a measure or ranking of a particular food based on its capacity to release, spike and maintain the blood sugar concentration post meal. The higher the glycemic index(GI ) the higher the spike in the levels.For example, white bread, potatoes, polished rice. In the body when sugars are released at a slow consistent rate into the body it poses less pressure on the pancreas to release insulin. But when the blood sugar levels spike immediately it pushes the pancreas to produce more insulin in less amount of time. Occasionally this kind of stress is well managed by the body but a consistent stress such as this leads to diabetes and no longer the body has the full control over the maintenance of the sugar levels and poses a high risk of Type2 diabetes. With a low GI diet, one provides energy flow for a longer period of time and does have many health benefits such as maintenance of a healthy weight, reducing the chance of making fats out of sugars.
