Substrate : Denatured proteins are the ideal substrates for the enzymes that digest proteins
Enzymes : Includes pepsin, trypsin, Proteases, Chymotrypsinogen etc.,
Temperature : 370 C
pH : Most of the protein digesting enzymes requires an basic (pH of 8) . But some proteases such as pepsin works well at acidic pH (around 3.5) whereas, alkaline phosphatase works well at pH 10.
