1. Ans:

Yes. Because the sucrose is monovalent. It does not make to much osmosis. Since osmosis is colligative property it depends on species number. Since salts have multiple valency ( Ex: NaCl - Na and Cl two species) it icreases osmosis and increase the volume more.

2. Ans:

The membrane pore size (Cutoff size)of the dialysis tubing mainly results in differential permeability. For example 10 Kd cutoff will easily permeable to ions not big structures like albumin or starch.
