Yes, we had the results what we predicted before starting the experiment. As we knew, amylase works well at 37 degree centigrade and a pH 7. The activity of this enzyme will be lower anything below this temperature. In observation part of this experiment, we have seen that the activity of amylase becomes slower below this temperature and at 0 degree centigrade it does not catalyze starch.
The optimum pH for the reaction of starch with amylase is pH 7. pH values anything lower or higher than this value will result in a slower rate of reaction. Amylase can work in the range pH 3 to pH 11.
At pH 7, I think that the reaction will proceed best. The pancreas and salivary glands only make the amylase. The ranges in saliva pH is 7.1-7.5, and in pancreas 7.1-8.5.
