Question

(I know this is two parts but any help will be greatly appreciated!)

Your aunt who is diabetic came across this diet plan ad on Facebook and she has some questions for you. The article says you shouldn’t eat bananas because compared to other fruit; it has a high glycemic index, (causes a rise in blood sugar soon after eating)

The first thing she wants to know is: how can the sugar in bananas be bad for you? A banana is a “whole food” after all and thus is not full of processed sugar right?

a. (3 pts) In order to address her questions, you first have to explain the difference (and similarities) between table sugar and the sugars found in yellow bananas. In your explanation, you teach her some science words but also use non-science explanations of what those words mean, so she will understand what you are telling her.

b. She still seems confused so you see if a picture will help. You start with the sugars found in yellow bananas. Starting from the Fisher Projections provided, draw the aldose sugar in the alpha pyranose ring form and the ketose sugar in the beta furanose ring form. State which hydroxyl attacked the respective carbonyls to obtain these ring forms.

Explanation / Answer

'Raw bananas have starch which turns into sugars in ripe bananas. The ripe bananas fructose, sucrose and glucose. Fructose and glucose are the most abundant sugars while sucrose are not. In diabetic patient the immediate effect on the blood sugar is because of consumption of processed sugars containing sucrose and glucose level but not fructose. Fructose are invert sugars which taste sweet and do not replace glucose. This is the presence of sucrose and glucose that will affect the diabetic patient and so the ad is saying not to consume bananas. This is true for bananas despite being a fruit.

The three sugars to be drawn are sucrose, fructose and glucose.
