Since starch and cellulose both are formed from tha glucose monomers but their is a structural arrangement difference between then as in starch the gluscose have an alpha linkage whereas in case of cellulose linkage is beta 1-4 glycosidic linkage hence such structural configuartion makes it undigestible by humans because humans lack the enzyme cellulase that would allow the breakage of beta 1-4 linkage.
