Surfactants are usually organic compunds which are amphiphilic i.e, they contain both hydrophilic as well as hydrophobic ends.Thus, a surfactant contains both water soluble component and water insoluble component or oil-soluble component.

The water soluble group remains in the water phase whereas the insoluble component may extent into air phase or oil phase as a result called hydrophobic.
