Youngs experiment splits white light into different colors because the path difference between different wavelength of light is different thus causing the white light to split into constituent colors. The angular distance from central fringe depends on the wavelength. As the wavelength of red light is greater than as compared to other components thus red is displaced much more as compared to other components.The central fringe is white because for central fringe all wavelengths have no path difference and phase difference.
