Question

List several food products, in addition to the ones that you studied in the laboratory, which would give a positive iodine-starch test for carbohydrate. Suggest how you might make "honey" from table sugar. Draw the structure of a segment of an amylose molecule, and show how water breaks the acetyl bonds. Draw the structure of a segment of a molecule of inulin. On the basis of today's experiment, suggest a way to determine whether a compound is amylose or inulin. Compare the product that would be obtained from hydrolysis of a 50-50 mixture of inulin and amylose with the hydrolysis of sucrose. How would it compare with honey?

Explanation / Answer

The iodine test is used to test for the presence of starch. When treated with IKI solution—iodine dissolved in an aqueous solution of potassium iodide—the triiodide anion (I3) complexes with starch, producing an intense blue/purple colour.

In otherwords, when the iodine solution comes into contact with starch, it turns dark blue/purple. Otherwise, it will remain brown in color.

Cereal (mini wheats, raisin bran, corn flakes), chips (doesn't matter what kind as
long as there are potatoes in it), potatoes, chick peas, flour, and pasta's will answer starch-iodide test.
