Question
e) For the sake of this week’s topic, I bought a $5 kitchen scale and used it to measure the weight of two slices of chicken from the same chicken breast. I soaked one slice in water, and the other in a 5% salt solution. A day later, I reweighed the two slices of chicken breast. The results are given below:
Starting weight One day later Soaked in water 50g 52g Soaked in salt brine 48g 60g Most everybody explains the weight gain as osmosis. Salt moves into the meat by osmosis and then brings water with it. Discuss how the process of osmosis does or does not explain what happened to the chicken when it soaked.
Explanation / Answer
Osmosis doesnot explain weight gain in chicken soaked in salt solution. Since Osmosis is movement of solvent ( water) from less concetrated solution to more concentrated solution. In our case brine solution is higher concentration than chicken , hence water movse from chicken to brine solution thus making chicken less mass.
Answer would be diffusion ( where salt moves from higher concentrated brine solution less concentrated chichek)
