The amylose structure has several glucose units connected through acetal linkages. When it is combined with the iodine solution , the iodine molecule gets inside the amylose coil. The iodine atoms get aligned linearly in the center of amylose coil . The transfer of some charges occur between amylose and iodine which create energy level spacings, that absorbs part of visible light spectrum , and giving an intense blue color.
