Question
A solution of sucrose (table sugar, C_12H_22O_11) plus water (H_2O) is fermented to form ethenol (primary alcohol, C_2H_5OH) and carbon dioxide (CO_2). a. Write a balanced equation showing this reaction. b. If this fermentative process is 100% efficient (e.g.all sucrose becomes thenol) and the target alcohol content of your final solution is 12%, how much sucrose (in grams) would you have to add to 5L of water, prior to fermentation? c. If the solubility limit of sucrose is 2,000 g/L, how much more sucrose (in moles) could be added to your answer in Part c before reaching this limit/Explanation / Answer
Balanced reaction is
C12H22O11 + H2O ---> 4C2H5OH + 4CO2
moles of Alcohol in the final solution = 12%
100 gm comtains 12 gms of alcohol
moles of alcohol= mass/molecular weight= 12/46=0.27 moles
4 moles of alcohol requires 1 mole of C12H22O11
0.27 moles require 0.27/ 4=0.0675 moles of C12H22O11 , mass = 0.0675*342=23.085 gms
it also reqruies 1 mole of H2O hnce moles of water= 0.0675, mass of water= 0.0675*18=1.215gm
1.215 gm (= 1.215ml asuming water density to be 1 g/cc) requires 23.085 gms of C12H22O11
5L= 5000ml requires 5000*23.085/1.215=95000 gms
3. but solubility limit is 2000 g/L
1L of water dissolves 2000 gms of C12H22O11
5L of water dissolved 5*2000 =10000gm of C12H22O11
moles of C12H22O11 that could be added= 10000/342=29.23 moles
