"Washing" the organic layer with saturated aqueous sodium chloride which is also otherwise known as brine is used to to pull the water from the organic layer to the water layer. Hence it works as drying agent. Because Saturated NaCl or salt solution wants to become more dilute. Also the salts have a stronger attraction to water than to organic solvents.
