This is from the Mastering ArcGIS 7th edition book. For each, i picked a coordinate system, but want to be sure I picked the right one. Can you please tell me what the best one would be? Also, how do I find the correct one?

Humboldt County, California: NAD 1983 State Plane California FIPS 0401 (meters), projection: Lambert_Conformal_Conic

Grafton, New Hampshire: NAD 1983 StatePlane New Hampshire FIPS 2800 (meters), projection: Transverse mercator

Nevada: Equidistant Conic, Projection: Equidstant_Conic (this state has 3 UTM zones, so is it best to pick the one I did or a state plane one (even though Nevada is in three different UTM zones?)

New Jersey: NAD 1983 State Plane New Jersey FIPS 2900 (meters), Projection: Transverse mercator

England: WGS_1984-GCS -- should it be Europe Equidistant Conic, Euroope Lambert Conformal Conic, or other??

Antartica - I don't know what to use for this one??

The choices and their justification are as hereunder-

Humboldt County- This is in California and you have selected the projection system- NAD1983, state plane California, FIPS (0401) meters, this projection cover's the latitudes 40 to 41.66 and the Humboldt County latitudes and longitude value is in its confirmation so this is right option.

Grafton: New Hampshire, NAD1983, FIPS 2800 is suitable for Grafton county projection. Since the projection is specifically designed using North American datum, so it is suitable for projection of North American locations. Moreover for mid latitudes conic projections are best suited.

Nevada- Insted of state planes use different projectionforr Nevada you may use NAD 1983 HARN, UTM zone 12N with transverse Mercator projection.

New Jersey- for New Jersey, NAD 1983, FIPS 2900/is suitable.

England- For England conical projection is suggested since it lies in midlatitude areas. Considering this for England the lambart conformal conic is a good option.

Antarctica- Antarctica lies in high lattitude zone and for such lattitude zones Azimuthal.projection is suggested. You may use South Pole lambart Azimuthal equal area projection for Antarctica.
