crystalline solids are more stable because there is usually an energy of crystallization, that is released on crystallization with interactions between molecules. amorphous solids usually happen when substances are cooled quickly and then move too slowly to orientate themselves into ordered crystalline solids. Carefully cool motor oil and it will get thick but not solidify versus putting a vegetable oil in the freezer - solid sometimes crystals as well.
