The final solution is cooled in an ice bath in order to obtain the crystals. since when the solution is hot or at high temperature the solubility increases,as a result the solute is soluble in the solvent and as soon as we start decreasing the temperature the solvent molecules come closer and leave the solvent molecules because the randomness decreases at low temp and molecules come closer and form crystals.
Since our solute particles contain impurities so when we cool our hot solution directly in an ice bath the crystals of solute grows and along with them the impurities ,as a result the crystals obtained contains the impurities also so we are not getting the pure crystals.
However when we cool them first by letting the solution come to room temperature and then cooling in an ice bath means we are slowly decreasing the temperature ,intially the impurities also crystallise with solute particles but after some time the impurities leave the crystals since the temperature is lowered slowly the solute molecules come closer and interact with each other more effectively as s result the packing or arrangment of solute particles will be more efffective hence in a stable form as a result the impurities will no longer prefer to be with them hence the crystals obtained contains no any impurities further, hence the crystals are pure.
