Solubility is the mass of a solute that can be dissolved in a given mass of solvent (here water) and it  varies according to temperature. At 40 oC KNO3 has solubility in water is 63 g/100 g water and at 0 oC it is 14 g/100 g of water (From solubility graph for potassium nitrate in water).

So, at 0 oC, the excess amount will be precipitated out.
