Explanation / Answer

1) While cooking broccoli inside the pressure cooker, the pressure is more then the normal pressure. As a result boiling point of water increases. Since the boiling point of water increases, the temperature required for simmering will also increase. Hence, Broccoli will be over cooked.

2) In Rotovapour, it uses produces vaccum and hence lowering the pressure, which results in lowering of boiling point. Hence, the temperature required for simmering decreases. So broccoli remains under cooked.

3) In Sous Vide Bath, food is cooked with precise temperature control, under calibrated pressure. Hence, there is no change in boiling point and after 10 mins the brocoli will remain perfectly cooked.
