we cant use the ice because it will take some energy for the ice to get convert from solid to liquid which is enthalpy of fustion which will also take time and there will only be a small change in temperature or sometimes there may not be any change in temperature as the heat from water will be used up in melting the ice so it is difficult to calculate the temperature change and hence we cant use ice
and specific heat capacity of metal is very low and the temperature of metal changes more for even small amount of change when compared to water hence we cannot use the metal also
