The federal overtime mandates as per the Fair Labor Standards Act (FLSA). That all the employees protected by the Act must obtain overtime pay for hours worked over 40 in a workweek at a rate a minimum of time and one-half their regular rates of pay.

And per the law , Department of labor, Wage and Hour Division (WHD) the workweek is 7 consecutive days, and it can not be averaged through clubbing.

So, if for Calzoni all employees workweek must be fully rigid and fixed, if not then it might happen that in a random 7 days one person might have worked say 5 days, so 50 hours, so by law 10 hours are to be paid by 1.5 times.
