Question

Barney and Lenny run a bakery making whoopie pies, a sandwich-like treat that consists of two cake-like patties with a frosting filling. The bakery sells two sizes of whoopie pies, regular and small. The same amounts of materials (e.g., flour and sugar) are used to make a batch of either size. However, a smaller amount of dough and frosting is used for each unit of the smaller size.

The process begins with Lenny using the bakery’s one mixer to make a batch of dough; this takes eight minutes for either size of whoopie pie. Lenny then spoons the dough onto baking trays. This takes ten minutes for a batch of either size. The dough is then baked. The bakery has one oven. It can hold one batch of either regular or small pies at a time. Regular-sized patties bake for 24 minutes; small patties bake for 18 minutes. The patties then cool for 10 minutes. Assume there is ample space for cooling patties. The patties remain on their baking trays while cooling. Assume that the bakery has enough baking trays that trays are not the bottleneck.

While Lenny is spooning dough, Barney uses the bakery’s one mixer to make a batch of frosting which can be used for one batch of patties for either size of whoopie pie. This takes ten minutes. The frosting is then chilled in the refrigerator for 20 minutes. Assume there is ample space for chilling frosting. After the frosting has chilled and the patties have cooled, Barney assembles the whoopie pies. (Baking trays are not needed for assembly.) This takes 15 minutes for a batch of small whoopie pies and 12 minutes for a batch of regular ones. Currently, two-thirds of the bakery’s demand is for small whoopie pies.

a) Complete the table, identify the bottleneck, and determine process capacity. (Show work.)The bottleneck is ____________________. Process capacity is ________________ batches per hour.

Explanation / Answer

In the given figure the flow of products is very clear. So need to explain detail.

The demand of small product is 66.66%

The demand of small product is 33.33%

Let time for a particular activity for smaller batch product “x”

time for a particular activity for bigger size batch product “y”

so according to the demand the average time for one activity per product = x*0.66 + y*0.33

therefore the average time required for one batch product for make dough = 8*0.66 + 8*0.33 = 8 min

average time required for one batch product for spoon dough = 10*0.66 + 10*0.33 = 10 min

average time required for one batch product for bake = 18*0.66 + 24*0.33 =20 min

average time required for one batch product for assembly = 15*0.66 + 12*0.33 = 14 min

average time required for one batch product for make frosting = 10*0.66 + 10*0.33 = 10 min

since the rest departments has huge space for huge process, so these cannot be bottleneck

from the above calculation it is clear that bake requires height time ( 20 mins ) so bake section is bottleneck in the bakery.

Now the capacity of bakery = 60/20 = 3 batchs per hour
