Animals such as ruminants like cows and sheep contain certain symbiotic anaerobic bacteria ex. Cellulomonas in the flora of the rumen, and these bacteria produce enzymes called cellulases that help the microorganism to digest cellulose.

In human being this enzyme cellulase is absent that is why digestion of cellulose does not occur in our GIT.
