The consumption of large amounts of soft drink beverages and processed foods sweetened with high – fructose corn syrup has been linked to obesity. This is because the fructose is readily metabolized than glucose. Fructose may enter iver and trigger lipogenesis or synthesizes triglycerides and cholesterol in liver cells and adipocytes and thus contribute to obesity and other health risks like some types of cancer.
The metabolism of fructose occurs by conversion of fructose to fructose – 1 – phosphate by fructokinase enzyme. The fructose – 1 – phosphate enters the glycolytic pathway and converted to DHAP and glyceraldehyde. The DHAP is then converted to glyceraldehyde – 3 – phosphate by triose phosphate isomerase enzyme. Glyceraldehyde also converted to glyceraldehyde – 3 – phosphate by glyceraldehydekinase enzyme.
The conversion of fructose – 1 – phosphate to glyceraldehyde – 3 – phosphate, the glycolytic intermediate (in the first way) escapes the regulation of enzymes like hexokinase and phosphofructokinase – 1. Where as glucose need to undergo the regulation of these enzymes during glycolysis.Thus, fructose is metabolized rapidly than glucose and causes obesity.
