yes i choose multiple choice questions because there are elemental to survey writing.They are versatile,intuitive and they yield clean data that's easy for you to analyze.for suppose if a single answer it ask what is your favourite pizza topping?but in multiple choice questions you can ask like which of the following pizza toppings do you like?

i will choose likert scale data type becase user can select multiple choice value from a custom likert.

i will choose 5 point scale
Because for the best data I recommend using odd numbering scale.if you expect your results to be fairly equitable,meaning fairly equal numbers of positive and negative responses then 5 point scale will be best choice.
