Question

Chickens with an average mass of 1.77 kg and average specific heat of 3.55 kJ/kg.°C are to be cooled by chilled water that enters a continuous flow type immersion chiller a0.5°C Chickens are dropped into the chiller at a uniform temperature of13.5°C at a rate of 410 chickens per hour and are cooled to an average temperature of3.0°C before they are taken out. The chiller gains heat from the surroundings at a rate of175 kJ/h. Determine (a) the rate of heat removal from the chickens kW (Round to one decimal place) and (b) the mass flow rate of water if the temperature rise of water is not to exceed 2°C. kg/s (Round to two decimal places) chicken 8.59 mwate,-1 1.03

Explanation / Answer

m = 1.77 kg ; Cc = 3.55 kJ/kg-deg C ; Tc = 3 deg C ; Th = 13.5 deg C ; N = 410 ; Qch = 175 kJ/h

a)we need to know the mass of chicken first

m = 410 chicken/hr x 1.77 = 725.7 kg/h

m = 725.7/3600 = 0.202 kg/s

We know that,

Q = m c delta T

Q = 0.202 kg/s x 3.55 k J/deg C x (13.5 - 3) = 7.53 J/s

Hence, Q(chicken) = 7.53 kJ /s = 7.53 kW

Q(water) = Q(chicken) + Q(gain)

Q(gain) = 175 kJ/h = 0.049 kJ/s

W(water) = 7.53 + 0.0972 = 7.58 k W

Q(water) = m(water) Cw delta T

m(water) = 7.63 kW/4.18 x 2 = 0.907 kg

Hence, m(water) = 0.907 kg
