I am conducting a study of patients preference in terms of communication with their health care providers ( via email/ or electronically or verbal). My question is that, what type of data analysis techniques and test would I need to perform to validate the assumption that email communication has and or can improve the quality of care that physician provides to their patients. What type of information would I need? Do I run ANOVA and if so, what would I be comparing? What am I looking for?

Yes you can run ANOVA. ANOVA (Analysis of variance ) is used to determine whether there are any statistical significant diffrenence between the means of two or more independent groups.
