Q.5 Phenomenon responsible for change in mass of potato in each solution is OSMOSIS.
Osmosis is special type of diffusion where net movement of solvent across biological membrane occurs. Solvent moves from high solvent concentration(diluted solute) to low solvent concentration(concentrated solute) till attaining equillibrium.
In case of potato, water (solvent) will move according to concentration of salt in salt solution versus potato cell cytoplasm solute concentration.
Hypotonic solution is a solution where concentration of solute is more inside cell than outside of cell.
In hypotonic solution as solute is concentrated inside cell so water(solvent) from outside will enter inside cell through water channels and cell will swell that will result in increase mass. As per observations provided in question DH2O and 1% NaCl solution are hypotonic solutions. When potato cell kept in these solutions water from its high concentration entered inside cell and resulted in increased mass of potato.(Endosmosis)
Hypertonic solution is a solution where concentration of solute is less inside cell than outside of cell.
In Hypertonic solution as solute is concentrated outside cell and more water (solvent) present inside cell ,water will move from its high concentration to its low concentration concentration. It causes loss in water content of cell cytoplasm causing it to shrink. It results in loss of mass of cells.(Exosmosis)
So when potato was kept in 5% and 10% NaCl solution- As solute concentration was more outside of cell than inside of cell, water moves from inside of cell to outside of cell causing potato cells to shrink and due to water loss from cell cytoplasm mass of Potato decreased.
Isotonic solution is a solution having same solute concentration on both sides of biological (semipermeable) membrane (Inside and outside of cell same solute concentration). So water can move freely across cell membrane without changing solute concentration. So it do not have any endosmosis or exosmosis effects on cell. It do not result in swelling or shinking of cell and hence mass of cell will not change.
Q.6 No any salt Solution is perfectly isotonic because we can see in every salt solution there is either loss of mass or gain of mass of potato cell. If it is isotonic salt solution cell mass would have remained constant.
* TIP-Always remember in case of osmosis only solvent diffuses across semipermeable membrane and solute never moves.
