You finally finished all mid-term exams. You and your friends went to restaurant to have a soju-beer cocktail (so called "So-Mac” in Korean) for celebrating the end of the mid-term. You already had many experiences to make So-Mac, which is usually made by mixing soju with beer. On that day, when you tried to make So-Mac, interestingly, you brought up a question "Which one should be first? Soju or Beer?" You were naturally curious about the time to reach a homogeneous alcohol concentration depending on the mixing sequence. So, you decided to test the time to reach a stable and homogeneous alcohol concentration of So-Mac by switching mixing sequence. Firstly, you prepared two cups of soju and two cups of beer (Here, the size of 4 cups are same). Let's assume that two liquids are directly contacted to each other in the initial state, so that you can ignore any force and any velocity by twisting your wrist in order to pour a liquid to the other (i.e., only gravitational force will be applied to liquids). And the amount of soju and beer is same. Therefore, you tested two cases that put Soju on beer and vice versa (see the below figure) (Assumptions: 1. Change of concentration is constant across the cross-sectional area (i.e liquids act like a plug flow). 2. Soju and beer are in same temperature. 3. Soju is consisting of 20% alcohol and water only. 4. Beer is consisting of 5% alcohol and water with carbonic acid gas.)

Answer 1: According to the information, beer contains carbonic acid as a constituent whereas soju does not. This means that when beer would be poured in a container, the carbonic acid would undergo spontaneous degradation due to rapid oxidation and carbon dioxide bubbles would start moving upwards. These gaseous bubbles help any solution placed above the beer solution to mix gently and homogenously since the fluidic movement of the gaseous phase will be homogenous in this case. Hence, when beer is poured before soju, a more homogenous solution of the so-mac can be obtained.

Answer 2: Since saccharine is a type of sugar which is generally highly sweet in taste as compared to glucose owing to its high sweetness index, it is not recommended as a dietary product for daily use, irrespective of their almost similar molecular weights. Moreover, excessive use of saccharine can impair insulin homeostasis in the body and thus can disturb homeostasis. Hence, the saccharine containing soju is not a very good dietary drink as compared to beer which contains glucose.
