Question

Wet fraction of yolk (yolk mass divided by egg mass) and the wet grain of albumen (albumen mass divided by egg mass) . How do absolute yolk mass and relative yolk mass change with egg size? How do absolute albumen mass and relative albumen mass change with egg size? Wet fraction yolk versus wet fraction albumen has what kind of relationship if any. see attached photo

Explanation / Answer

Ans. The absolute yolk mass increases with an increase in the egg size whereas on the contrary the relative yolk mass would be reduced due to egg size.

As the hen aged the size of egg enhances due to the deposition of the yolk leading to an increase in the absolute albumin content whereas reducing the relative albumin content.

The major difference is observed in case of egg mass due to the wet fraction of yolk and wet fraction of albumen. The mass of wet fraction of albumen plays a vital role in determining the mass of egg as compared to the wet fraction of the yolk.
