Atmospheric oxygen cannot carry out the oxidation of cellulose and cane sugar by itself. It requires multiple sets of the enzyme to carry out their degradation.

To degrade sucrose present in the cane-sugar, sucrose first needs to be converted in glucose and fructose which is carried out by the enzyme sucrase.
