cane sugar is a disaccharide which is made from glucose and fructose.

The reason why paper and cane sugar stable at room temp in the presence of oxygen, is that in carrying out the oxidation of cellulose and cane sugar we need enzymes. Atmospheric oxygen cannot carry out the oxidation of cellulose and cane sugar by itself. It requires multiple sets of the enzyme to carry out their degradation.

To degrade cellulase present in the paper, cellulose first needs to be converted in glucose which is carried out by the enzyme cellulase.

To degrade sucrose present in the cane-sugar, sucrose first needs to be converted in glucose and fructose which is carried out by the enzyme sucrase.

To further oxidize glucose and fructose it requires many enzymes

Enzyme cellulase and sucrase are not present in the environment.
