This organism has in the past caused infections associated with ground meat. The organism is more likely to cause problems in ground meat rather than steak or beef that is not ground because the surface of the meat is probably what gets contaminated. In ground beef, the bacteria on the surface of the beef are mixed throughout the beef when it is ground. Because the bacteria are throughout the ground beef it is harder to kill them by cooking (some people like their ground beef rare or medium rare, which means the interior is not thoroughly cooked). An intact steak that is contaminated contains the bacteria on the surface, where the organisms can be killed more easily even if the steak is cooked to rare or medium rare. The toxin produced by EHEC is a verotoxin. It was named this because it was studied in a type of cell line called Vero cells, and the toxin killed these cells. Another name for it is Shiga toxin, as it is similar to a toxin produced by Shigella dysenteriae. Vero toxin causes the bloody diarrhea and kidney damage associated with the disease.
