I can't wrap my head around why bracket A has 2T acting on it to the right and not only 1T. Block B is moving to the right and its force has T to the left. Why would bracket A have 2T and not only 1T?

Lets understand the concept of tension. In ideal case, in light string, the tension is uniform (say T). If this string is attached to an object, it pulls with the same force T. At B, the string is in contact at one location only, so force is T. But in case of A, it is at contact at top point as well as bottom point of the pully, so 2T is acting.
