In normal alpha helix, the cyclical side chain of proline result insteric hindrance that will lose its conformational entropy uponfolding. In collagen, the proline and lysine are hydroxylated. This increasethe conformationla stability of collagen, thus it can fits well tothe collagen structure. Hope this helps!
