When metal is added to the water the thermometer takes time to read the temperature.Because water is a bad conductor of heat and heat is also lost in the surrounding.So it takes time for the thermometer to be in eqilibrium with hot water. Therefore energy conservation is valid if we take into account the lost energy in the surrounding.But without that energy conservation is not valid in this case.
