3)3rd possibilty
By handling it with our dirty hands , we may add some extra mass to the sample like oil, dirt , dead skin etc. i.e. basically we have contaminated our mixture , any residue with our hands has mixed with the substance.
So calculated mass of NaHCO3 will not change but calculated percentage of NahCO3 may change.
